Terroir will have a big influence on our spirit and we are lucky enough to have a variety of terroir on our farm.  Just like for grapes and the wine they produce, it is important to understand the different soil types and how they impact on the way in which the agave grow and mature.  This ultimately influences the characteristics of the spirit that is produced from those plants.
