The farm

On the doorstep of the Great Barrier Reef sit coastal Australia agave fields and a purpose built distillery. 20 degrees south of the equator - a mirror image of Tequila’s home in Mexico - the farm is unmistakably Australian. Flanked by eucalypts and shared with abundant native wildlife, its creeks and waterways flow through it directly into the Coral Sea.

Australia's first coastal agave farm and distillery is located in the Whitsundays' rain shadow known locally as The Dome.

The rain and storms that come over the Great Barrier Reef from the Coral Sea are bent around our farm, pushing the rain away.

It then returns via the waterways upstream, so we have access to water moving through the region but not falling as Wet Tropics rain.

Our plants are the Blue Weber Agave (Agave tequilana weber azul). And yep, that's the same plant used in the distillation of tequila, with one important difference. Our plants have been grown from pups taken from a plantation just up the road in Ayr. So they are acclimated to Australia, specifically Queensland’s dry tropical north, making them True Blue Aussie Agave.

A FOCUS ON PROGRESS AND INNOVATION WITHOUT THE BURDEN OF TRADITION AND RULES.

Act of Progress
The distillery has been designed to create exceptional Australian agave spirit while being as energy efficient as possible.

Upcycled shipping containers, spectral drone technology, geo tagged plants, energy-saving sub condensers, a custom-designed ultra small batch still, gravity-fed water management, double copper pot distillation, and a repurposed wine press - just a few of the innovative features built into the production and distillation processes that will propel agave into a new era.

Act of Stewardship

The distillery is powered by renewable energy - just part of our commitment to act with care towards our land, our plants, our waterways, the coast and Coral Sea.

RENEWABLE ENERGY

The distillery’s energy needs are delivered by biodiesel, a renewable fuel produced from organic materials. It offers a sustainable and eco-friendly energy source for the site’s operations.

WATER

All waste water from the distillery is captured and gravity fed into one of 2 dams on site, the largest of which has a capacity of 10m litres. Water is then used for irrigation and in case of emergency.

TECH

Through the use of drone technology and data management, plant growth rates and health are recorded, along with weed suppression effectiveness.

CARBON

New land management activities are improving soil quality and increasing carbon content after years of intense farming previously.

COVER CROPS

The use of cover crops improve soil health resulting in increased productivity for plant production and increased water retention in soil, reduced sediment run-off and weed suppression.

INDUSTRY

As a year-round crop, agave can assist local service providers to ‘level-load’ their operations. Over time is will provide an alternative crop for producers in the area to grow on TSI’s behalf.
