Agave 101
Agave spirit is any spirit distilled from the agave plant. There are hundreds of varieties of agave. Very few varieties are cultivated with the majority found growing wild in Mexico.
The most widely known Agave spirits are tequila and mezcal. Tequila is a type of mezcal.
Like cognac and champagne, both spirits are protected under appellations laws. They can only be produced in specific ways and in designated regions.
Mezcal can be distilled from a variety of Agave varieties while Tequila must be distilled from the Blue Agave, Agave Tequilana Weber Azul.
Our plants are Blue Agave, acclimated to the unique conditions in Queensland’s Dry Tropics.

HOW IS IT MADE?
Harvest

Our agave is harvested whole and the leaves shaved from the pina just like Tequila.
Cooking

We slowly steam the pina for 3 days in a purpose-built steam oven similar to a traditional Mexican horno oven. True to the sustainable ambitions of the facility, rather than using bricks, our Australian version is built from an up-cycled shipping container.
Crushing

After cooking, the pina is crushed in our local version of a tahona made from a re-purposed wine press, with the agave crushed against stone to extract the perfect flavour.
Fermentation

We use traditional open fermenters and our own speciality recipe of yeast to create the perfect agave wash for our unique Australian agave spirit.
Distillation

All of our Australian agave spirit is twice copper pot distilled by hand. All our cuts and distillates are made and tasted by the team.
